Method

  1. Drain the soaked urad dal and grind it to a smooth paste using minimal water.
  2. Transfer the batter to a large bowl and beat it well to make it light and fluffy.
  3. Add chopped onions, green chilies, cumin seeds, black pepper, ginger, curry leaves, and salt to the batter. Mix well.
  4. Heat oil in a deep frying pan over medium heat.
  5. Wet your hands with water, take a small portion of the batter, and shape it into a round vada with a hole in the center.
  6. Carefully slide the vada into the hot oil. Fry a few vadas at a time, turning them occasionally until they are golden brown and crisp.
  7. Remove the vadas using a slotted spoon and drain the excess oil on paper towels.
  8. Serve hot with coconut chutney and sambar.
