Ingredients
- 1 cup urad dal (split black gram), soaked for 4-5 hours
- 1 medium onion, finely chopped
- 2-3 green chilies, finely chopped
- 1 tsp cumin seeds
- 1 tsp black peppercorns, crushed
- 1-inch piece of ginger, finely chopped
- 1 sprig curry leaves, finely chopped
- Salt to taste
- Oil for deep frying
- Water as needed
Method
- Drain the soaked urad dal and grind it to a smooth paste using minimal water.
- Transfer the batter to a large bowl and beat it well to make it light and fluffy.
- Add chopped onions, green chilies, cumin seeds, black pepper, ginger, curry leaves, and salt to the batter. Mix well.
- Heat oil in a deep frying pan over medium heat.
- Wet your hands with water, take a small portion of the batter, and shape it into a round vada with a hole in the center.
- Carefully slide the vada into the hot oil. Fry a few vadas at a time, turning them occasionally until they are golden brown and crisp.
- Remove the vadas using a slotted spoon and drain the excess oil on paper towels.
- Serve hot with coconut chutney and sambar.
