Ingredients

Method

  1. In a large pan, heat ghee over medium heat.
  2. Add grated khoya and sauté for a few minutes until it turns light golden.
  3. Add milk and sugar to the pan. Stir continuously until the mixture thickens.
  4. Sprinkle cardamom powder and saffron strands (if using) into the mixture. Continue to cook until it reaches a barfi-like consistency.
  5. Grease a plate or tray with ghee and pour the mixture into it. Spread evenly and press chopped nuts on top.
  6. Allow the barfi to cool and set. Once set, cut it into square pieces.
  7. If using, garnish with silver leaf (chandi ka varak) for an elegant touch.
  8. Serve the Barfi Malai at room temperature as a delightful sweet treat.
