Ingredients
- 2 cups full-fat milk
- 1 cup sugar
- 1/2 cup grated khoya (mawa)
- 1/4 cup ghee
- 1/4 tsp cardamom powder
- 2 tbsp chopped mixed nuts (almonds, pistachios)
- A few saffron strands (optional)
- Silver leaf (chandi ka varak) for garnish (optional)
Method
- In a large pan, heat ghee over medium heat.
- Add grated khoya and sauté for a few minutes until it turns light golden.
- Add milk and sugar to the pan. Stir continuously until the mixture thickens.
- Sprinkle cardamom powder and saffron strands (if using) into the mixture. Continue to cook until it reaches a barfi-like consistency.
- Grease a plate or tray with ghee and pour the mixture into it. Spread evenly and press chopped nuts on top.
- Allow the barfi to cool and set. Once set, cut it into square pieces.
- If using, garnish with silver leaf (chandi ka varak) for an elegant touch.
- Serve the Barfi Malai at room temperature as a delightful sweet treat.
